This here is a good little recipe for muffins should you need something delicious, easy and protein rich to accompany soup.
Ingredients:
2c white flour
2tsp baking powder
1/2tsp baking soda
1/2tsp sald
1c cottage cheese
2 eggs
6tbsp milk (just under 1/2 cup)
1/4c sugar or honey
4tbsp melted butter or olive oil
Buttload of fresh minced dill (or 1tbsp if dried)
Instructions:
1. Preheat oven to 350. Grease loaf pan or muffin tins.
2. Sift flour, baking powder, baking soda and salt in a large bowl. Make a well in the centre.
3. In a separate bowl, combine cottage cheese, eggs, milk, sugar/honey, melted butter/olive oil and beat well.
4. Add wet to dry along with dill and mix just enough to blend.
5. Spread evenly in pan or among muffin cups. Bake for 50 minutes (loaf) or 20-30 minutes (muffins).
6. Let cool x 10 minutes, remove from pan and cool another 30 minutes before serving.
7. Put it in your mouth.
