Beans

How long can/should I soak beans before I need to use them?

  1. As with so many things, the longer the better. 6-8 hours should do it. I usually put them in water before I leave in the morning and cook them when I get home. There is a faster method where you bring the unsoaked beans to a boil, then immediately remove them from the heat and let them soak for an hour before cooking them for realz. I have tried this before with chickpeas, and it really was not a good scene. But it might work with smaller beans like black or navy.

    I agree with Kaitlin, but offer the following warning. Do not soak your beans for 2-3 days on top of your refrigerator without changing the water. Also, do not forget about the beans you have been soaking on top of the refrigerator when you call your building superintendent to complain about the "raw sewage" smell coming into your suite. And do feel extra lucky when your superintendent does not see said bowl of soaking beans on your fridge when he comes to investigate. Or at least be thankful that he chose not to comment.
